What is happening on the other side of the screen
Each table is a physical studio where a dealer works in front of several cameras. Cards come out of a real shoe and are read by optical sensors, the roulette wheel is spun by hand, and the outcome is recognised by software and confirmed by a human at the same time. That is precisely why live games have no demo mode: you cannot deal a free hand with real cards. You can, however, join any table as an observer and watch several rounds without placing a chip.
The dealer sets the rhythm. The betting window opens and closes against an on-screen timer, and once the call of no more bets is made, no further chips are accepted. Table limits
